As a home baker who loves to cook with the healthiest ingredients, I'm always on a mission to find recipes where no one will know that they are good for them... and this is it! I just made these for a get-together with friends and I asked them if they noticed they were gluten-free. They said they couldn't tell, although they did already know they were GF, so hopefully, they weren't just being super sweet. Although, when I've made these several times for friends, they are always a hit! This is by no means me bragging, but I know how challenging it can be to find sweet treats that everyone can enjoy.



When you know a recipe is not only delicious but also contains healthy ingredients, there is joy that comes with not just being able to enjoy a sweet treat with less guilt, but knowing you are feeding yourself, your family, and your friends nourishing ingredients, rather than harmful ones. There are so many chemicals these days... it's so important to take care of our bodies, but not sacrifice the joy of sharing a treat with the ones you love... or just treating yourself (absolutely nothing wrong with that & I highly encourage it!). I believe God gave us the gift of sweets to bring joy in our lives and to bless others.

Ingredients you need to make this 4-layer cake:


  • Organic Cane Sugar - I love the organic cane sugar from Azure. It's un-refined and a much healthier choice than the refined white version. It is a bit darker in color, but worth it as it doesn't seem to raise my blood sugar as much.

  • Lemon – Organic is best since you will be zesting it.

  • Butter – Make sure it's room temp! I like to set it out the night before. Azure has some great organic cultured butter options (probiotics!).

  • Vanilla Extract – I have searched all over and found the best deal, stored in glass, from Azure. If you buy in bulk, you will save a little money.

  • Sea Salt - Redmond's Real Sea Salt is my fav for baking! So many good minerals.

  • Cassava Flour – I have tested so many cassava flowers & Otto's in the best. I've used their non-organic and organic version... both work great.

  • Organic Raspberry Jam – Crofter's Organic Seedless Raspberry Jam (unless you are purchasing in bulk from Azure, Thrive Market is the least expensive) is my go-to for this recipe! Feel free to switch up the berries and the jam. I've even done raspberry jam with blackberries & raspberry jam with cherries... use what's in-season & fresh!

  • 1 Small Package Fresh Raspberries – With soft-fruit like raspberries, Organic is really the best option.
