Lemon-Lavender Cookies {GF, DF, Paleo}

Updated: Jun 17

Lemon, lavender, honey, and almond flour pair perfectly together in this heavenly little treat. Plus they are really quick and easy to make! Not only are these cookies tasty but the smell is just as heavenly when you are making them. Aromatherapy cooking! Lavender has so many medicinal properties but in this cookie, it's all about the sweet floral flavor to transport you to a vacation to the South of France;).

I took these cookies to friend’s house. She fell in love with them! She is from France, so this was an extra-special compliment:). I thought I would share them with you as well! Going to France has always been a dream of mine. I actually took four years of French when I was in High School (but remember very little;)). It’s fun having a friend who is fluent…I can live vicariously through her;).

Speaking of living vicariously and travel. My husband found the best YouTube channel that we have been watching for our nightly entertainment…@luxurytravelexpert. The man’s job is to go to luxury resorts and record them! It has been so fun watching these with my husband. It seriously makes us feel like we are vacation! I highly recommend it!

I’m not sure if he has any videos in France but these cookies would pair perfectly! We did just watch a couple of episodes from Italy…absolutely stunning! Lavender has been shown to help alleviate insomnia, anxiety, and stress. So turn on The Luxury Channel Expert and make yourself some Lemon-Lavender cookies and melt that stress away;). I think we all could use a little (or a lot) of that right now. A little wine or limoncello wouldn’t hurt either;).

I hope you enjoy this recipe and you are finding ways to turn down that stress dial during these challenging times. It’s so important for our health to keep the stress down with positive thinking and a little self-love (preaching to the choir here). Stress decreases our immune system and leaves the tank empty! Let’s find ways to fill our tank back up together! And bonus…Lavender not only helps with anxiety + sleep to help boost our immune system but also contains antioxidants!

Do not be anxious about anything, but in every situation, by prayer and petition, with thanksgiving, present your requests to God. And the peace of God, which transcends all understanding, will guard your hearts and your minds in Christ Jesus. Philippians 4: 6-7

A little side note: I know I preach a lot about soaked/sprouted nuts and this recipe contains un-sprouted almond flour (however; you could make your own or purchase…if you can find and is not crazy expensive). Un-sprouted/soaked nuts can be hard on your digestive system but sometimes you need to treat yourself…I am certainly far from perfect! And you may have caught it already…but the flowers in the pics are actually Lupins, not Lavender. Lavender isn’t blooming where we are yet:).
